How do women *do* that? I couldn't get my knee to my shoulder if you paid me a million, and I never could, even when I was young and slim.

Both of them pretty dang outstanding accomplishments. I don't get how they even *walk* in stiletto heels, much less dance or kung-fu fight.

The heels thing isn't that difficult...as long as the shoe is strapped on, tightly; it just becomes part of the person.
Those boots looked..."killer," if you'll excuse the expression; I haven't seen any of those movies (not interested) to know if that's a pun or not! lol!
But...yeah...the ODD "boots" that she wears for her Les Miserables premier are...not, imo.

Indeed the Catwoman boots have a serrated edge on the heels! Nasty stuff. Fortunately the film, while showing her kicking a lot of dudes in the head, does not show how that would actually look with those heels, she'd be showered in blood.

I am surprised you can not get your knee to your shoulder. It must mean that you also can not tie your own shoe laces, which is a common problem for fatties, but rarely to those of normal weight.
Utthita parsvakonasana is a similar but more difficult posture, but even there I've never seen anyone who couldn't do it to at least some degree -- even without practicing.
I am a 51 year old male yoga teacher / practitioner. I often include this pose or variations of it in my classes and the majority of practiced students (both men and women) can easily do it. Newer students might have trouble, but a regular practice 2-3 (or more) times per week will open most hips over time. Not that yoga is about the poses ... it is a moving mediation to facilitate inner peace and quiet ... improved strength and flexibility is a nice added bonus.
